The Many Types of Pizza

In only a few hundred years, pizza has evolved from a simple peasant meal to a foodstuff of infinite variety. We've been trying to come up with some way to list the many styles of pizza -- should we divide by region (New York, Naples, Chicago, New Haven, etc?) or by topping (cheese, vegetable, pepperoni, etc?), by shape (round, square, oblong, rectangular?), by meal (breakfast pizza, dessert pizza?) or by the thickness of the crust? So many variables... Then we realized -- There's an advantage to being passionate pizza lovers and not librarians! We can call them as we see them, and when there's variation in pizza that's significant enough, we'll list it as a 'type of pizza' and add it to this section. So there will be regional types, stylistic types, and whatever type of pizza we find, we'll describe define it, picture it, and tell you where to find it.

Pizza history

pizza is a baked pie of Itlian origin consisting of a shallow bread-like crust covered seasoned tomato sauce ,cheese ,and often other topping such as sausage or olive. the world pizza is belived to be from an old Itlian word meaning a point,which in turn became the Itlian word pizzicare, which means to pinch or pluck. The pizza could have been invented by phoenicians Greeks, Romans or any one who learned the secret of mixing warter with flour and heating it on a hot stone. In one of its many forms, pizza has been a basic part of Itlian diet since stone age. this earlist form of pizaa was a crude bread. that was baked the stones of the fire. after cooking, it was seasoned a variety of different toppings, instead of plates and untensils to sop up broth or gravies. it is said that the idea of using bread as a plate came from Greeks who ate flat round bread baked with an assortment of toppings. it was eaten by the walking man and his family, beacuse it was a convenient food. 2o century for many people espically Italian-American , the frist America pizza was called tomato pie , tomato pie are built opposite pizza pies, frist cheese, then the toppings and then the sauce. 21century December 9 2009 The Europe Union eastablish a ruling to protect Naples Neoplitan pizzas The Neoplitan pizzas now was a part of European food hertigate.

how to make pizza

Step 1: You will need	Units: Metric US Imperial UK Imperial
180 g plain white flour 1 tsp salt 1 tsp dried yeast ½ tsp caster sugar 1 tbsp olive oil 120 ml warm water polenta for dusting 2 bowls 1 spoon some cling film 1 rolling pin 1 measuring jug 1 sieve 1 circular baking tray	Preparation Time: 2 hours 20 minutes

1. Step 2: Sieve the flour

   Place the sieve over a bowl, add the flour and gently shake it through.

2. Step 3: Make the dough

   In the medium bowl, combine the salt, yeast and caster sugar. Make a hole in the centre, add the olive oil and warm water and mix in well. Give it a quick, final mix by hand to create a rough paste.

3. Step 4: Knead the dough

   Remove the dough from the bowl and place onto the chopping board. Knead the dough for roughly 3-4 minutes, using the heel of your hand. Keep kneading until it has formed a smooth ball.

4. Step 5: Leave dough to rise

   Transfer the dough into a large clean bowl, cover with some cling film, and leave it to rise for approximately two hours or until it has doubled in size.

5. Step 6: Roll the dough

   Uncover the bowl and sprinkle the dough with flour. Remove it from the bowl and place onto a flat surface. Sprinkle some more flour over the dough and roll it into a circle. Dust with flour again, turn it over and roll the other side.

   Flour the base of the circular baking tray. Place the dough over the tray and push it outwards into a rustic circle.
7. If you aren't going to bake it straight away, it needs to be wrapped in cling film and kept in the fridge, for a maximum of 24hours.
